Avocado Pumpkin Muffins

Ingredients

  • 2 cups unbleached flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 large whole banana mashed
  • 1 medium ripe avocado mashed
  • 1 cup pumpkin puree
  • 2 whole eggs
  • 3/4 cup light or dark brown sugar
  • 1 tsp vanilla extract
  • 1/2 cup finely chopped pecans

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line muffin tin with 12 liners
  3. In the bowl of an electric mixer, combine avocado, banana, pumpkin, eggs, vanilla and sugar
  4. Beat until smooth.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, salt and nutmeg.
  6. While mixer is running on low, slowly add flour mixture to wet mixture, stopping to scrap down the sides
  7. Combine until just mixed, then stir in pecans.
  8. Using an ice cream scoop, drop batter evenly among cupcake liners.
  9. Bake for 20-25 minutes until a toothpick comes out clean.
  10. Store in an airtight container.
