Herb-Roasted Sheet Pan Chicken with Potatoes & Green Beans

Preheat oven to 400 degrees F. Zest a large lemon and finely chop the fresh herbs.  Whisk the olive oil basting ingredients together in a bowl, reserving 1 tbsp for the green beans.

Roast

Place the chicken on a lined sheet pan and baste with the olive oil mixture.  Toss remaining seasoned oil with the potatoes and spread them evenly on sheet pan.  Roast For 25 minutes.

Add The Veggies

Toss the green beans with the remaining tablespoon of seasoned oil and add to the sheet pan with chicken or roast in a separate pan.  Continue roasting for 20-25 minutes more.
