Easy Skillet Potato Puff

A light and fluffy mashed potato souffle mixed with milk, eggs and butter baked to a puffed perfection.

Ingredients

  • 4 cups cooked and mashed potatoes
  • 6 tablespoon milk
  • 4 eggs separated
  • 3 tablespoon butter melted
  • salt and pepper to taste
  • 8 oz shredded white cheddar cheese
  • optional add-ins: crumbled bacon onions, pancetta, fresh herbs, sour cream
  • 2-3 tbsp fresh chives chopped

Instructions

  • Preheat oven to 400 degrees F.
  • Spray cast-iron skillet with olive oil spray or rub with butter and set aside
  • Stir together potatoes, egg yolks, butter, milk, and chives in a large bowl until well mixed. 
  • Next, Stir in cheese. 
  • Using an electric mixer, beat egg whites until stiff and gently fold into potato mixture. 
  • Pour potato mixture into the greased skillet.
  • Bake (in the cast iron skillet) in preheated oven for 20 minutes or until lightly browned. 

Notes

*You can also bake this in a buttered souffle dish.
