Ingredients

  • 3 oz honey smoked salmon
  • 2 packed cups fresh greens
  • 1 mandarin orange peeled and divided into sections
  • ½ cup fresh blueberries
  • ½ shallot diced
  • ¼ cup orange juice not from concentrate
  • 2 tablespoon balsamic vinegar
  • ½ tablespoon extra virgin olive oil
  • salt and pepper to taste

Instructions

  • Combine ¼ cup blueberries, half of the shallots, orange juice, balsamic vinegar, olive oil and salt and pepper in a blender and blend until smooth.  Set aside.
  • Add greens, remaining onions, remaining blueberries and orange slices in a bowl and top with salmon.
  • Drizzle dressing over top and enjoy.
