Air Fryer Sweet Potato Wedges

An easy recipe for sweet potato wedges cooked in an air fryer in under 20 minutes.

Ingredients

  • 2 sweet potatoes medium size, peeled (this is optional) and sliced into 8 wedges
  • 1 tablespoon extra virgin olive oil or avocado oil
  • ½ tablespoon paprika
  • 1 teaspoon seasoning salt 
  • ½ tablespoon tapioca starch can also use cornstarch or arrowroot powder

Instructions

  • Scrub the sweet potatoes and cut in half lengthwise (you can peel them or leave the skins on…your preference).  Cut into 8 wedges
  • Place the cut potatoes into a large bowl and toss with the olive oil. Then add seasonings and toss to evenly coat.
  • Preheat the air fryer to 380 degrees F and spray the basket with EVOO spray.
  • Transfer the sweet potatoes, in batches if necessary, to the air fryer and lightly spray them with the olive oil spray.
  • Air fry for 8 minutes, flip, and cook for 7-10 more minutes or until golden and cooked through. Adjust seasoning to taste.
