Loaded Chicken Nachos
An easy baked nachos recipe made with boneless chicken breasts cooked in the slowcooker

- 24 oz boneless skinless chicken breasts
- 1 packet taco seasoning
- 2 cups chicken broth
- 8 oz low-fat cheddar cheese shredded (or Monterey Jack)
- 16 oz organic blue corn tortilla chips
- 1 avocado sliced
- Optional Garnishes:
- salsa
- low-fat sour cream
- pickled jalepenos
- shredded lettuce
Spray slow cooker with non-stick spray and pour chicken broth in the bottom.
Season with taco seasoning and cook on low for 4 hours.
Preheat oven to 350 degrees.
In a 9x13 baking pan, spread the chips on the bottom of the pan.
Shred the chicken from the crockpot and spread on top of the chips.
Top with cheese and bake for 10-15 minutes
