cups
cooked and mashed potatoes

tablespoon
milk
4
eggs
separated
3
tablespoon
butter
melted
salt and pepper
to taste

shredded white cheddar cheese
optional add-ins: crumbled bacon
onions, pancetta, fresh herbs, sour cream

fresh chives
chopped
Instructions
Preheat oven to 400 degrees F.
Spray cast-iron skillet with olive oil spray or rub with butter and set aside
Stir together potatoes, egg yolks, butter, milk, and chives in a large bowl until well mixed.
Next, Stir in cheese.
Using an electric mixer, beat egg whites until stiff and gently fold into potato mixture.
Pour potato mixture into the greased skillet.
Bake (in the cast iron skillet) in preheated oven for 20 minutes or until lightly browned.
Notes
*You can also bake this in a buttered souffle dish.
