Grain-Free Chocolate Chip Cookies

Ingredients

  • 1/2 cup dark amber grade A maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup unrefined Virgin Coconut Oil melted
  • 2 organic eggs
  • 3 cups blanched almond flour
  • 1 tsp baking soda
  • 1 tsp Celtic sea salt
  • 1 1/2 cups Enjoy Life semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375 degrees.
  2. In the bowl of an electric mixer combine all dry ingredients.
  3. Blend until mixed. In a medium size bowl, beat eggs, maple syrup and vanilla.
  4. Pour wet ingredients into dry ingredients and mix well.
  5. Stir in chocolate chips.
  6. Drop a rounded tablespoon size ball of dough onto parchment lined cookie sheets.
  7. Bake for 15 minutes until lightly golden.
