					<description><![CDATA[I used pork tenderloin slow smoked over mesquite into a homemade beef bone stock with dried anchos and 4 varieties of sauteed fresh peppers, sauteed 3 Vidalia (sweet) onions, garlic, 3 russet potatoes cubed, sliced &#038; sauteed tomatillos and grape-tomatoes chopped and sauteed. Juice of 2 limes.  No beans.  The smokiness of meat adds depth.  Thanks for your site.]]></description>

Hi Michelle! Yes, you can definitely do it in the oven. However, I haven&#039;t tested this option for temp and time. You could try cooking it covered at 325 degrees F. for 2-3 hours, until the pork easily shreds with a fork. Please let me know if you try it and how it turns out this way.]]></description>

I ended up using more red and green bell pepper and onion than called for and a bit more chili powder. I didn&#039;t win the cook-off but I got a lot of, frankly, surprised compliments as well as recipe requests.  I will make it again but I was thinking that I might add some minced garlic next time. Thank you for the recipe.]]></description>
