In reply to Gina. Hi Gina! I haven't tried it with fresh ginger, but it would add great flavor! I would swap the dried ginger with about 1 tbsp fresh ginger (dried is more concentrated) and add it in with the wet ingredients. Let me know how it turns out!

Is it OK to use unbleached all purpose flour rather than unbleached white whole wheat flour?

The recipe for me only made four mini loaf pans. Make sure to check the measurement of the mini loaf pan.

I made four mini loafs but a tad bigger than the measurements you gave. Mine were in the oven for about forty minutes.
