Ricotta cheese pancakes are a savory breakfast or light breakfast for dinner option. Fluffy protein pancakes made with ricotta cheese and a hint of orange zest for extra flavor.
Ingredients
- 1 15 ounce container of ricotta cheese
- 1 1/2 cups unbleached all purpose flour
- 1 tbsp baking powder
- 1 tbsp sugar
- 4 eggs
- 1 1/2 cups whole milk
- 2 tsp vanilla
- 1 tsp fresh lemon or orange zest
- dash salt
Instructions
- Mix all ingredients in a large bowl until smooth
- Let it sit for a few minutes while you heat up your pan to med-high heat
- Spray with olive oil cooking spray or coconut oil and drop pancakes by 1/4 cup size onto hot griddle
- Flip when mixture is bubbling
- Serve with fresh fruit, pure maple syrup or your favorite jam
