Ricotta cheese pancakes are flavorful breakfast pancakes made with ricotta cheese, unbleached flour, eggs, milk, and fresh citrus zest. This classic recipe is always a winner with 8 grams of protein per serving.
Ingredients For Ricotta Cheese Pancakes
- 15 oz ricotta cheese
- 1 ½ cups unbleached all-purpose flour
- 1 tbsp baking powder
- 1 tbsp sugar (can also use stevia or another sugar alternative)
- 4 eggs
- 1 ½ cups whole milk
- 2 tsp vanilla
- 1 tsp fresh citrus zest (lemon or orange)
- dash salt
Method:
Mix all ingredients together in a large bowl until smooth. Allow the batter to sit for a few minutes while you heat up a large skillet on medium-high heat. Coat the pan with coconut oil or spray with olive oil and drop the batter by ¼ cup scoops onto the hot griddle. When bubbles appear and the pancake is a light golden color, flip and cook the other side. Serve immediately with your favorite toppings.

- Let it sit for a few minutes while you heat up your pan to med-high heat
- Spray with olive oil cooking spray or coconut oil and drop pancakes by ¼ cup size onto hot griddle
- Flip when mixture is bubbling
- Serve with fresh fruit, pure maple syrup or your favorite jam
