Although this is an Italian Skillet, my family refers to this as Spanish Rice… and they LOVE it. I use the white rice from Chinese takeout and skipped the pepper, sausage and mushrooms. Easy to put together and definitely a weeknight skillet for a busy mom. Enjoy!

Made this with fire roasted romas from the garden, tomato sauce from the garden. and baby bella mushrooms, It was to die for. great recipe!
