Hi Patricia! You definitely can use fresh apricots but the amount needed with the other ingredients is hard to know how to adjust without having tested the ratios. Dried apricots have more intense flavor and are sweeter because the drying process concentrates the natural sugars, so you made need to add more sugar. The liquid may need to be adjusted, as well. For a tart tamper swap, you can use the back of a small rounded measuring spoon or a wine cork works pretty well, too. Let me know if you try the the fresh apricots and how it comes out!]]></description>
