Recently, I asked some of my dietitian blogging friends to share their favorite go-to weeknight meals that were not only healthy, but delicious too. Many of these ladies contributed recipes to my blog while I was recovering from surgery in March. I figured that you all might be having withdrawal and craving more of their great content, so I put together this fun post for your meal planning inspiration.
Meal prep is a life-saver for us to get nutritious meals on the table in a hurry.
We grill most of our lean proteins on Sunday and pre-chop all of our veggies, so that we can quickly pack meals for lunch and prep quickly throughout the week. Another thing that saves us on busy days is having a good variety of quick and easy recipes that don't require a lot of fuss. Don't get me wrong, I love fancy, labor intensive recipes, but I don't have time for them on weekdays. I need things that I can whip up pretty fast. Ain't no busy mama got time fo' that! Here are some favorites from my dietitian friends. I hope that this makes your life a little bit easier!
