Hi Cindy! If you wanted to use fresh spinach, you can saute it in a skillet with a little olive oil until wilted, then add it to the casserole ingredients. It would take a LOT of fresh spinach to equal the amount of thawed frozen spinach here, anywhere from 16-24 oz of fresh. I haven&#039;t tested the conversion, so if you try it, please let me know how it turned out. I bet it would be great, though!]]></description>

I actually doubled the amount of chicken from one cup to two cups (maybe a little bit more) as one cup didn&#039;t seem like enough.  And who doesn&#039;t need more protein?  This recipe is a keeper and will definitely be in my regular rotation.]]></description>
