Thank you for this great feedback, Wendy! I made it again this week and tried it without draining the tomatoes and green chiles as you suggested. It was good with a little extra liquid, too. I like it both ways, so I just added a note to the post. It&#039;s a fast weeknight staple for us. We love this one, too.]]></description>

					<description><![CDATA[I love how easy this dish was to make!  I used rotisserie chicken, Amee&#039;s Easy Chicken Taco Seasoning recipe, and a combination of Monterey Jack, Cheddar, and Cotija cheeses that I shredded myself.   I found that I needed more seasoning than what would have been a packet&#039;s worth of the Siete brand taco fajita seasoning, so I just seasoned to taste.   I didn&#039;t measure the lime juice, but I added a full lime&#039;s worth.   Since my husband is a sauce guy, the only changes I will make next time is to not drain the tomatoes &#038; chilies  and to add some water while adding the taco seasoning (as you would when making tacos).  We loved this dish and will definitely be making it again!]]></description>
