You could roast it, but I think the flavor would be too strong for this dish. Let me know if you tried it!

Hi Wanda! You can definitely finely chop the broccoli, but the texture is best with the eggs included. I'm glad that it was a hit!

Hi Wanda! I'm so glad that it was a hit! I'll have to test out your broccoli dip idea. That sounds fabulous!

I wasn’t able to double the recipe but I did follow the directions to make the broccoli casserole for Thanksgiving yesterday. It was a hit! My gluten free daughter was thrilled. This will be my go to from now on. I do have a thought about broccoli dip. Do you think this would work if the broccoli was finely shopped and the eggs left out of your recipe? Thank you again for sharing this wonderful recipe.

I haven't tried it yet to see how it bakes when doubled, but I would just use a 9x13 and adjust bake time, if needed. Let me know if you try it and how it turns out.

Hi Tina, you could roast it but it will really change the flavor. If you try it that way, please report back and let me know how it turns out. No guarantees that it will be good this way since I have never tested it.

Hi Robin! I would cook the chicken first. You can cut it up into bite-size pieces and saute it over medium heat in 1-2 tbsp olive until no longer pink and then add it to the dish. Shredded rotisserie chicken would also be a great short-cut in a pinch.
