Almond Butter Chocolate Chip Cookies

These cookies are freaking amazing!!  This “Paleo” dessert is one of the best I’ve tasted.  Our friends brought these cookies to our gym for a Paleo dessert party and they were a big hit.  I made a few modifications from the original recipe and these are a winner.  Delish!  


Almond Butter Dark Chocolate Chip Cookies
Adapted From Fast Paleo

Ingredients:

  • 1 cup almond butter (love Barney Butter smooth!)
  • 1/3 cup honey (can sub real maple syrup)
  • 1 egg
  • 1/2 Tbsp. vanilla extract
  • 1/2 Tbsp. almond extract (or can use all vanilla extract)
  • 1/2 tsp. salt (*only add the salt if you are using unsalted almond butter)
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 2/3 cup shredded, unsweetened coconut
  • 1/2 cup dark chocolate chips (such as Enjoy Life brand)

Directions:

1. Preheat oven to 350 degrees.
2. Oil baking sheets or line with parchment paper.
3. Stir together first 7 ingredients. Mix well. Make sure honey is fully incorporated.
4. Add coconut and chocolate chips and mix until well combined.
5. Scoop with a cookie scoop onto cookie sheets. Bake 9-12 minutes or until lightly browned.
Yield: about 20 cookies with a level 2 Tbsp. cookie scoop

    I just made these and they are amazing! My cookies were a bit bigger (14 total) so I left them in for about 16-18 minutes and they were perfect. My husband who eats whatever he wants ate 4 of them in one sitting, I had to hide them! I used raw honey and no salt even though my almond butter was unsalted (didn’t need it). Thank you!!

    …I also did the calorie count on the recipe calculator for myfitnesspal. 146 calories per serving with 20 servings (cookies) total this is using raw honey and all as the recipe states.

    You could substitute almond flour for the shredded coconut. Heather, I am so glad that you loved them!!! Thanks for sharing your great modifications and the calorie count for the recipe! :)

    I made a similar cookie about a month ago using the pulp from making coconut milk, cashew butter, raw honey, and butterscotch chips (and the remainder of your recipe). They were fabulous. The kids LOVED them. I put the recipe together from 3 other recipes I found. Nice to see this all in one recipe. I’ll try these again, but this time without the coconut. I’m not a big fan, but I use the milk and I hate wasting the pulp. Thanks!

    This is an amazing recipe! I used to be the peanut butter queen, but now I’m the almond butter queen…I have been searching for a great “treat” recipe that used almond butter and dark chocolate chips that was grain and processed sugar free. I’m really not sure if finding this recipe is such a good thing because I can gobble down so many of these cookies! :)
